1 ½ cups (190g) all-purpose flour 1 tsp baking soda 1 tsp baking powder ½ tsp salt 3 large ripe bananas, mashed ½ cup (100g) granulated sugar
¼ cup (60ml) vegetable oil (or melted butter) 1 large egg 1 tsp vanilla extract 2 tbsp milk (optional, for extra moisture)
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the muffin cups.
In a medium bowl, whisk together flour, baking soda, baking powder, and salt. In a large bowl, mash the ripe bananas until smooth.
Add the sugar, oil (or melted butter), egg, and vanilla extract to the mashed bananas. Whisk until everything is combined.
Gradually fold the dry ingredients into the wet banana mixture, mixing just until combined. Be careful not to overmix to keep the muffins light and fluffy. If the batter seems too thick, add 1-2 tablespoons of milk for extra moisture.
Divide the batter evenly into the muffin tin, filling each cup about ¾ full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
