Fluffy Banana Nut Muffins are delicious baked treats made with ripe bananas and chopped nuts, typically walnuts or pecans.
1 ½ cups (190g) all-purpose flour 1 tsp baking soda 1 tsp baking powder ½ tsp salt 3 large ripe bananas, mashed (about 1 ¼ cups) ½ cup (100g) granulated sugar
¼ cup (60ml) vegetable oil (or melted butter) 1 large egg 1 tsp vanilla extract ½ cup (60g) chopped walnuts or pecans (or more, to taste)
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the muffin cups.
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
In a large mixing bowl, mash the ripe bananas until smooth. Add the granulated sugar, oil (or melted butter), egg, and vanilla extract to the mashed bananas. Mix well until combined.
Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix to keep the muffins fluffy.
Gently fold in the chopped nuts. Divide the batter evenly among the muffin cups, filling each about ¾ full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
