Fluffy Moist Apple Cinnamon Muffins

Fluffy Moist Apple Cinnamon Muffins are delicious baked treats that combine the warm flavors of cinnamon and fresh apples in a soft, tender muffin. Here’s what makes them special. 

 1 ½ cups (190g) all-purpose flour  1 tsp baking powder  ½ tsp baking soda  ½ tsp salt  1 tsp ground cinnamon  ½ tsp ground nutmeg (optional)  ½ cup (100g) granulated sugar  ½ cup (100g) packed light brown sugar

Ingredients:

 ½ cup (120ml) vegetable oil (or melted butter)  2 large egg  1 tsp vanilla extract  1 cup (about 2 medium) peeled and diced apples (e.g., Granny Smith or Honeycrisp)  Optional: ¼ cup (40g) chopped nuts (e.g., walnuts or pecans) or raisin

 Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.

Step 1-Instructions: Preheat Oven

 In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg (if using).

Step 2-Mix Dry Ingredients

In a large bowl, whisk together the granulated sugar, brown sugar, and oil until well combined. Add the eggs and vanilla extract, mixing until smooth.

Step 3-Mix Sugars and Wet Ingredients

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix. 

Step 4-Combine Wet and Dry

Gently fold in the diced apples and any optional add-ins like nuts or raisins. 

Step 5-Fold in Apples

 Divide the batter evenly among the muffin cups, filling each about ¾ full.

Step 6-Fill Muffin Cups

 Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Step 7-Bake

Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. 

Step 8-Cool and Serve
