Quick & Easy Fluffy Banana Bread Muffins are individual-sized muffins that have the same delicious taste and texture as banana bread, but are made in a much quicker and more convenient format.
Ingredients: 1 ½ cups (190g) all-purpose flour 1 tsp baking soda 1 tsp baking powder ¼ tsp salt 3 ripe bananas, mashed
½ cup (100g) granulated sugar ¼ cup (60ml) vegetable oil (or melted butter) 1 large egg 1 tsp vanilla extract Optional: ½ tsp cinnamon for added warmth
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the tin.
In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
n a large mixing bowl, mash the ripe bananas until smooth.
Add sugar, oil (or melted butter), egg, and vanilla extract to the mashed bananas. Mix well until combined.
Gradually stir the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix; it's okay if the batter is slightly lumpy.
Spoon the batter evenly into the muffin tin, filling each cup about ¾ full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
